🧺 Ingredients
- Eggplants — 1.5 kg
- Salt — to taste
- Sunflower oil — 120 ml
- Carrots — 100 g
- Onion — 200 g
- Bell pepper — 250 g
- Tomatoes — 200 g
- Vinegar — 50 ml
- Black pepper — to taste
- Garlic — 5 g
👩🍳 Instructions
- Cut the eggplants into cubes, salt, and leave for 15–20 minutes, then rinse and pat dry.
- Fry the eggplants in part of the oil until soft, then transfer to a pot.
- Prepare the other vegetables: chop the onion, grate the carrots, slice the pepper, dice the tomatoes.
- Fry the vegetables until soft and add to the eggplants.
- Add salt, pepper, vinegar, and minced garlic.
- Simmer everything together for 20–25 minutes on low heat, stirring occasionally.
- Serve immediately or store in sterilized jars.
💡 Tip: For a richer flavor, add fresh herbs at the end of cooking.
